No matter what part of the chicken you're cooking, there is always a danger of not cooking your chicken evenly. That's because chicken parts contain bones. Not only that, chicken pieces can have different sizes.

However, this danger of uneven cooking can be prevented with a simple cooking technique that eliminates that: making the chicken pieces all the same thickness.
While you can make all the chicken pieces all the same size, the bones are what will prevent you from cooking these with any degree of evenness. Remove the bones, and you instantly have chicken pieces that are easier to make the same thickness.

To do this, all you need is something heavy and something that has a flat side. A meat mallet is the best tool for pounding these chicken fillets.
If you've never done this before, here's how you do it:
1 Place a chicken fillet between two pieces of plastic wrap on a cutting board. 2 Using a meat mallet or even a big empty bottle, pound the chicken until the chicken fillet is of the same thickness throughout its surface. 3 Once completely even, remove from the plastic wrap and use as directed in your recipe. It sounds easy to do, and it is. What's great about this technique is that the chicken will almost always cook evenly. The only other factor that could make this technique fail is the pan you're using. If you're using a pan that heats up evenly, you're golden.
